Leanpath — Reducing Food Waste with Technology

Food waste is typically between 4% and 12% of our industries’ food costs and can be anything from producing too much food at the prep stage, from spoilage to plate waste.

In a case study at a Restaurant Associates site in the UK, over the course of a year 3,169 meals were saved, 1 tonne of food waste prevented and over 5 tonnes of CO2 emissions saved.

We know that in Australia it is estimated food waste costs the economy $36.6 billion each year and that one in five shopping bags end up in a bin, which for the average household is worth $2,500 each year.

We are excited to embrace the new innovative technologies from Leanpath which enable our clients to closely examine where the food waste is coming from and the best ways to reduce this impact.

Leanpath provides a waste management solution, allowing us to measure and understand how much waste we are creating for every single dish being prepared and served.

The solutions use a combination of tablet, scale and AI software, allowing the solution to ‘machine learn’. The data collected through Leanpath devices is then analysed to identify patterns and trends in food waste generation.

Detailed reports and actionable insights are then provided to the team with waste reduction opportunities.

This can include adjusting food purchasing, modifying the preparation method or implementing other operational changes. Training is provided to all operational teams and impact measured over time for continuous improvement.
